West Bengal is the treasure of Sweets. There are variety of sweets available in every corner of this state. It’s a tradition of
Bengal that every guest has to be welcomed with some different types of
sweets. At the wedding ceremony, there are lots of sweets arranged & the most attractive is A Big Sandesh. Today I am
going to share an old traditional sweet description. This sweet is a trademark
of Bankura, Beliatore. Yes, I am talking about Mecha Sandesh. It makes people crazy to eat whenever they pass Beliatore. It dissolves in your tough when you put it in your mouth. If you do not taste it, I suggest you to take once before leaving Bankura.
History:
Before going to Mecha Sandesh, I just want to increase
your knowledge about Beliatore. How Beliatore name come?
Many years ago, during the flood in Damodar River,
lots of Sands accumulated & make a hip into these areas. In Bengali Sand is
called a Balu. So local people named these places as Balu tori. With the
spend of time, the name Balu tori converted into Beliatore.
According to The local Famous Store Mecha Mahal, This
sweet was first made by Mr. Girish Chandra Das Modok. They made these sweets since
their last four-generation. Currently, this shop owns Balaram Das Modok.
Location:
Beliatore is a town and a gram panchayat in the
Barjora CD block in the Bankura Saddar Sub-division of the Bankura District in
the province of West Bengal, India. Beliatore is the origin of craftsman
Jamini Roy. Yes your are right.. The Great Jamini Roy.
In the old days, sweet shops are situated in the village.
During the modernization, those are likely shifted towards the road side of the
Town. If you are food lover, we are sure you can't ignore the front facing shop of this delicious sweet.
Price & Categories:
According to the local shop, Sweets rate are variable
between 7-10 Rs. depending upon the quantity of the ingredient. Sometime
depending upon the customer requirement they increase some ingredient to make
it much tastier & delicious.
There is only one traditional category of these type of
Mecha Sandesh. But currently, some of the shop owners are making some changes in
their recipe to make it different from others.
Local Sweet shop takes orders from different areas like Kolkata, Durgapur & even foreign countries.
Recipe:
The traditional process of Mecha Sandesh making are
described below:
We
need the Following ingredient to make Mecha Sandesh:-

Cholar Daal or Besan
·
Ghee
·
Sugar Syrup
·
Elichi
·
Khir
·
Oil
·
Milk
Process:-
·
At first Chola or Chana blend in hand
blender
·
After blending, purified it based on grain
size
·
After purifying addition on water, make it
slurry
·
There
is a beautiful technique, by which this slurry is fried in a pot which is full
of oil.
·
The fried material is known as Sew Vaja.
·
Again the fried material blend & make
it dust form.
·
The dust is collected in a Pot & add
Khir, an adequate amount of milk, tasteful amount of Elaichi & after all according
to the need addition of Ghee.

Take all these ingredients & mix them
well for 30 min.
·
After mixing, take some mixture & make its spherical shape in hand.
· Besides this process, we have to make a Sugar
syrup & waiting for the completion of Spherical balls.

When all mixtures are well shaped, then the
final process is happening. Dipped all balls into Sugar Syrup.
·
After some hour, when syrup is going to be
solid, it ready to for sale or eat.
To conduct the whole process they took 2-3 people.
In West Bengal, we lost some great gems like those
types of culture. This is just because of the negligence of Modern culture. Mecha
Sandesh is a heritage of Bankura. Local people want the
patent of this recipe from the Govt. Of Bengal. A couple of years ago this sweet was degrading
in respect of its taste, but now it’s becoming again trending value by the effort
of the makers. It’s really surprising that this sweet is exporting to the
London. To reserve our culture & make it more famous we have to take an
initiative to promote it all over the world.
